Yummy Baked Sweet Carrots
This is such a simple and delectable dish. This recipe is great for holidays like Thanksgiving, Christmas, and Easter. Using this as a side to your holiday meal will call your guest to the table every time.
This is a fabulous dish to prepare at Christmas; family and friends will love it. It is easy to make and does not take much time to cook. Whenever you make baked sweet carrots you will leave your guest wanting more.
Baked Sweet Carrots
1 cup hot water
Pinch of salt
½ cup butter
½ cup dark brown sugar
¼ tsp of allspice
½ tsp vanilla extract
1 pkg baby carrots rinsed
Pre heat your oven to 400 degrees. Mix the following ingredients in a bowl, the hot water, pinch of salt, ½ cup butter, ½ cup dark brown sugar, ¼ tsp of allspice until all of the ingredients are dissolved and melted. Add the rinsed baby carrots and stir until the carrots are completely coated.
Pour into a round Pyrex baking dish with cover and place the oven. Cook for 15 minutes and stir coating the carrots with the brown sugar liquid and cooked covered in the oven for 20 minutes more until done.
There are some very nice variations to this recipe such as substituting 1 cup of orange juice for the hot water and adding 1/8 tsp. of cinnamon and a pinch of nutmeg to my original recipe which allows for a more candied flavor to the baked sweet carrots.
This side dish can be served at dinner, lunch or at a holiday or Sunday meal alongside a roasted turkey, a dressed ham, or a leg of lamb. This dish lends a sort of distinction to any holiday day table preserving the flavor and sophistication of the meal.
