Seafood Stuffed Tomatoes

Here’s a great item to serve at summer parties! You can substitute any sort of cooked seafood for the Shrimp if so desired.

Ingredients:
10 small tomatoes (make sure they are firm)
12 oz cooked Shrimp, chopped medium fine
1/4 tsp Kosher Salt
2/4 tsp cracked Black Pepper
1 cup Mayonnaise
1 TBS dark brown Mustard
Diced Fresh Parsley

To Prepare:
Slice off the top of each tomato. Discard the tops you cut off. Using a spoon, gently remove the pulp, seeds and juice from each tomato. Then carefully make a thin slice across the bottom of each tomato; this is done so that the tomatoes can stand up straight after you’ve stuffed them. Set hollowed out tomatoes aside. In a bowl, combine the shrimp, salt, pepper, mayonnaise and mustard. Using your hands, mix all of these ingredients until they are completely blended. Stuff each tomato with this shrimp filling. Once the tomatoes are stuffed, arrange them on a serving platter and place them in the refrigerator to chill for at least 2 hours. Just before serving, garnish the top of each tomato with a sprinkle of the chopped parsley.
