Quiche is a wonderful dish, as it can be served for any meal and accomodated for a variety of personal tastes. I like this zucchini quiche recipe for its ease of preparation and because it is a great way to use up the extra zucchini from the garden. You can replace one vegetable for another and even include meat, if you prefer. The quiche also freezes well for later meals or snacks.
2 cups shredded zucchini
1/3 cup grated onion
2/3 cup sliced mushrooms
1 cup Bisquick
1/2 cup grated cheese
1/4 cup vegetable oil
salt and pepper to taste
1 pie crust
Place pie crust in 9 inch pie pan. Mix all other ingredients together and pour into pie shell. Bake at 350 degree F. for 45 to 50 minutes. May be garnished with chopped tomatoes and black olives. Serve and enjoy!
