Recipes Bannock Bread

I first tasted this bread when I visited a friend living on Manitoulin Island.
Bannock is a bread prepared and eaten by First Nations people.
3 cups flour
1/4 cup melted fat (beef or bacon drippings) can be used.
(melted butter is a modern option)
1/2 tsp. baking soda
2 tbsp. baking powder
1/2 tsp. salt
1 1/2 cups water OR (1 cup water and 1/2 cup of milk is another option)
METHOD:
Measure dry ingredients in a large bowl, blend with fork
Add melted butter or fat into flour mixture
Add water into flour mixture
Stir with fork until well blended
Form into a ball
place on a lightly floured surface and knead gently 10 or 12 times
pat, forming a flat circle 3/4inch thick
place on a greased baking sheet
Bake at 350 F. 25-30 minutes
Optional cooking method is: deep fry in hot oil.
Delicious when served with homemade perserves or just butter!
