Holiday Christmas Fruitcake with Fresh Fruit
Are you tired of giving and receiving the same heavy, candied fruitcakes for the holidays year after year? This year, why not try something different? Make a fruitcake with homemade applesauce and moist fruits instead.
Great Grammy Holmes’ Fruitcake
1 cup cold sour applesauce
1 teaspoon baking soda
1 cup sugar
1/2 cup melted Crisco
2 cups flour
1/2 teaspoon salt
1 cup maraschino cherries, chopped and drained
1 cup walnuts, chopped or ground
1 cup raisins
2/3 cup (small can) crushed pineapple, well drained
1.Preheat over to 350 degrees Fahrenheit.
2. Grease and flour a large loaf pan.
3. In a metal mixing bowl, mix the baking soda into the applesauce.
4. Add the sugar and melted Crisco and mix well.
5. Add the flour and salt.
6. Fold the cherries, walnuts, raisins, and crushed pineapple into the batter.
7. Pour mixture into the loaf pan.
8. Bake for one hour.
This is best when made with homemade applesauce. A day before I make these fruitcakes I make the applesauce using Macintosh apples.
For a festive look I like to use both red and green maraschino cherries. The green ones can be hard to find, but it is worth the effort especially when making these for Christmas. I can usually find them in the section of the store that sells alcoholic drink mixes.
Don’t be afraid to modify this recipe as needed. Depending on whom I making it for, I may omit the raisins or nuts, or both. For some people I replace the raisins with dates.
Whether you eat this hot or cold, for breakfast or dessert, one thing is certain, it will be the best fruitcake you have ever had.
