Chicken cream cheese roll-ups
This recipe is one my mother passed down to me. I believe someone found it in a magazine and gave it to her. Momma would make this for supper when we had guests and on holidays. It is a quick and easy recipe yet so yummy we prefer to use it for special dinners.
4 to 6 pieces of boneless skinless chicken breast
Rinse the chicken breasts cut in half and flatten a little so you can roll them easily. With a butter-knife spread cream cheese over one side of each piece of chicken. Roll the chicken with the cream cheese inside and wrap a piece or two of bacon around the chicken. Place in baking dish and bake uncovered at 375 degrees until done.
Since most ovens vary as far as cooking times I prefer to check the chicken to make sure it is done. These roll-ups are done when the juices from the chicken run clear and the bacon is done.
If you need to you can use toothpicks to hold the rolls together. I have never needed to do this but some people may find this handy. If you roll the bacon correctly, the cream cheese will stay inside the chicken and the bacon roll and the finished product will be yummy and attractive.
This can be seasoned any way you prefer. A little lemon pepper or a little salt, pepper and garlic powder will really make this recipe flavorful.
Complete the meal
For a complete meal add a salad, baked potato and some fresh bread and you will have a delightful meal that does not take much time to prepare.
